A ROYAL PORTFOLIO RECIPE: JOHN JACKSON’S BUSH GRANOLA

As many of our guests stay at home to combat the spread of Covid-19, we wanted to share some of our Executive Chefs’ favourite recipes for you to try at home.
This simple but delicious recipe comes from Royal Malewane. A wholesome and tasty breakfast booster, John Jackson’s Bush Granola is legendary among our guests and staff. John was the first General Manager of The Royal Portfolio at Royal Malewane. He had a great impact on the culture and standards of The Royal Portfolio since its inception 20 years ago. We recommend you serve it with fresh, seasonal fruit and full-cream, plain yoghurt.
1⁄2 cup butter
1⁄2 cup soft brown sugar 1⁄2 cup honey
1⁄2 cup oats
1 cup All Bran flakes
1 cup cornflakes
1⁄4 cup sunflower seeds 1⁄4 cup sesame seeds
1 cup raisins or sultanas 1 cup mixed nuts
Bring syrup ingredients to the boil over a low heat, ensuring that they all dissolve completely. Pour syrup over dry ingredients. Mix well and bake in the oven on a medium heat, tossing every few minutes until syrup has been absorbed and dry ingredients have re-crisped. Allow to cool. The mixture will set into a solid slab if it isn’t constantly loosened with a fork until it has cooled completely.
